First, one must learn how to catch and handle these venomous fish safely, but this fish is good tasting and healthy!

We don't have the lionfish here on the Texas coast but, I'd give it a try if we did!

Hm if they have backbones, they are not suitable for Great Lent in my jurisdiction, though they would be all right for Nativity Lent. Depends on your own jurisdiction, though.

Yes, of course, but on certain feast days during Great Lent and the Nativity Fast, fish is allowed, and it does vary according to the jurisdiction.
