We do not use the Jewish term "shin," as we are referring to the All-Holy Spirit.

In the Troparion for the Baptism of Christ, we sing:

Wherefore also the Spirit did descend as a dove: because where there is reconciliation with God -- there also is the dove. So also in the ark of Noah the dove did bring the branch of olive -- a sign of God's love of mankind and of the cessation of the flood. And now in the form of a dove, and not in a body -- this particularly deserves to be noted -- the Spirit descended, announcing the universal mercy of God and showing with it, that the spiritual man needs to be gentle, simple and innocent, as Christ also says: "Except ye be converted and become as children, ye shalt not enter into the Heavenly Kingdom" (Mt 18:3). But that ark, after the cessation of the flood, remained upon the earth; this ark, after the cessation of wrath, is taken to heaven, and now this Immaculate and Imperishable Body is situated at the right hand of the Father.

Then why is this priory selling the Jewish symbol? this is very confusing.

There are many elements of Judaism that have been retained by the Christians.

Remember that Judaism originally taught the existence of the All Holy Trinity because in Genesis
it was written, "Let US create man in OUR OWN IMAGE." This indicates a plurality in unity: Triune Godhead.
We hear about the Spirit (Holy Spirit) moving across the waters like a dove.
The Father is heard as thunder, and the Son appears and walks with Adam and Eve in the Garden of Eden.

The dove is used repeatedly as a sign of the Holy Spirit guiding His Church whether the Old Testament or New.
It was the dove who let Noah know that it was safe to disembark from the Ark.

Thank you for clearing this up. Also, did the ancient Jews believe that the letter shin symbolized the coming messiah? or is this a rabbinical practice?

In the Hebrew Psalter (Songs of David), is the letter shin used?

In the Greek Septuagint, Saint David refers to the Holy Spirit repeatedly in his prayers ... "Take not Thy Holy Spirit from me." Doesn't this indicate that Saint David is begging God the Father to remain with him, to purify, and to illuminate him, and to sanctify him through His Holy Spirit. Does this also not indicate a belief in the Holy Trinity?

Agreed. shin is simply a Hebrew letter, and is seemingly being conflated with the Dove representation of the Holy Spirit. Those are doves depicted in those icons, not the Hebrew letter shin.
