Why the slaves patriarchs and metropolitans use a white kholobouk?

The Slavs have just seemed to develop more things to differentiate the various ranks of clergy. Since Metropolitans are a highrt rank than Archbishop in the Russian Church, this signifies this rank, much like a purple skufiya can (EDIT: and in the past as a rule would, in many Slavic Churches) signify an archpriest or protodeacon.
