I am not sure there are any specific patron saints for all monastics. Each monk is tonsured with the name of a saint, but often it is an "obscure" saint so that the monk does not even have the name of a great saint to be 'proud' of.

Some of the first monastics to come to mind though are those commemorated during the proskomede before the Divine Liturgy:
Sts. Anthony the Great, Euthymios, Paisios, Sabbas the Sanctified, Theodosios the Cenobiarch, Onuphrios, Athanasios and Peter of Athos. You could add to these: Sts. Pachomios the Great, Makarios the Great and Makarios the Egyptian and so many many more. For you also St. Sava the Serbian and St. Simeon Nemanja are very important.

All of their services can be found in the Menaion under their respective days.

Dear Frushka,

I have been given to understand that the patron Saint of male monastics is the Theotokos and St John the Forerunner is the patron Saint of female monastics at least in the Slavic tradition.

Theophan.
