I can't edit my post, but one great resource on this is St. John of Damascus. He referred to Islam as a heresy. So did St. Nikon of Salamis. I could talk about Sufism and such but the Saints actually highlight where and how Islam took from Christianity and how it spawned out of it. I might post the ...
